Early Salads

These salads use very perishable ingredients and can only be served the first seven days. These salads take up a lot of cooler space, so ordering only one of these is suggested.

SPINACH SALAD

pre-washed spinach leaves, red onion, mushroom, bacon bits & honey dijon dressing

GREEK SALAD

romaine lettuce, feta, olives, red onion, tomato, cucumber & Caesar dressing

CUCUMBER SALAD

cucumbers with a sugar and rice vinegar dressing

SALMON PASTA SALAD

lemony butter dill sauce with green beans, pasta and smoked salmon

MEXI-BEEF SALAD

beef, jicama,orange, avocados, beans with a cilantro vinaigrette

QUINOA SALAD

quinoa grain, feta, asparagus, tomato and vinaigrette

MEDITERRANEAN RICE SALAD

with Greek olives, parmesan, pine nuts and spinach

GASPACHO

cold tomato veggie soup, made with V8 and veggies

POTATO SALAD (PRE-MADE)

red potatoes, onions & parsley in a simple dressing

Heartier Salads

These salads use heartier fresh ingredients and may be served the first 14 days.

FRUIT SALAD

melon, apple, canned pineapple, raisin & walnut - great for lunch also

GARDEN SALAD

iceberg lettuce, tomato, carrot, cucumber, celery, red onion, and dressings

TABOULI

Middle Eastern wheat salad served with tomato, cucumber, and green onion

BLUE CHEESE SLAW

green cabbage with a blue cheese and yogurt dressing

Late Trip Salads

The following salads utilize mostly non-perishable ingredients and are great at any time of your trip.

BLACK BEAN SALAD

canned black beans, corn and olives with diced bell peppers, red onion with oil & vinegar

CHINESE CABBAGE SALAD

green cabbage, and ramen noodles with a soy/sesame dressing

COLESLAW

traditional cabbage crunch - green cabbage with coleslaw dressing

COUS COUS CHICK PEA SALAD

sweetened with raisins, apples and spices

APPLE & MANDARIN ORANGE SALAD

fuji apples, mandarin oranges, raisins and walnuts tossed with lemon juice.

JICAMA CUCUMBER SALAD

refreshing and simple - jicama and cucumber tossed with lime juice

RED POTATO SALAD

made with hard boiled eggs, pickle relish, onions, mayonnaise and mustard
